What's the best way to turn this into a tee / Y so that it can feed both a dishwasher and washing machine?

This would be the replacement right? https://www.screwfix.com/p/compression-appliance-tee-brass-x-x-15mm/24030
Will that screw directly onto the existing valve?
Thanks

No . The existing valve is removed and the new one fitted to the copper pipe. Or fit a "Y" shaped splitter onto the existing valve.

no, the old valve needs removed but even then you may struggle to get the pipe onto one side of it , you could maybe use one of these with a little bit of pipe and extend the existing

Is it hard to remove the valve correctly? Do I need to add any putty or something?

No but you need to shut the water off and use tools to remove the old valve then put the new one in its place then a little piece of pipe and then put the old one back on. If you're unsure at all I'd get a professional in to do the job, shouldn't cost too much.

Can't see why the old valve needs to go on. The dual outlet isolator is all that's needed.

It looks like it's too close to the side of the unit to get the right side fill pipe on?

Unless of course they were cut a hole through the side of the carcass, if that's where the fill pipe was coming from.

May just do it as is ,but cutting a bit out the back of the cabinet ain't too difficult if needs must.
