Plastic over copper ?

Hi I'm redoing our ensuite and it's mostly plumbed with grey 22 and 15 mm plastic pipe .
I'm not a plumber I'm an engineer and I've always used copper and soldered it with no issues .
The dilemma I'm having is do I do all the plumbing with plastic pipe or do I do what I'm used to and use a speed fit connector and continue using copper for the 1st fix on basins ,bath and shower .
What is everyone's else's preference ?

Copper usually for me (y) I’d do what you’re suggesting :D

Copper pipe was invented by the Romans (as was central heating) so it must be better than modern materials. In the same way that a horse is still way better than a car
 
Nothing wrong with plastic. Many plumbers who initially said they would never use it do now.
 
I've used hep2o for a long time and they're still ok.
Would it be ok in 50 years?
Who knows?
It all depends on what kind of rubber seals they used.
Some rubber trims i see in cars and boats last half a century and are still like new.
Some chinese rubber becomes brittle in 2 months.

Yes, I think this is the key point. Which is why I use brass compression fittings whenever I use plastic pipe - no rubber to deteriorate.
