Mortar between patio slab and ACO?

Do I need to leave a gap between paving slabs and the edge of the ACO channel?

If so, what size gap?

If so, do I have to use a mortar mix or can I use the same joint compound that I’m using the for rest - pro joint fusion

We usually butter (mortar) the sidewall of the Aco (like a brick) before pressing it into place. Or butter the slab edge.

Ah okay so I can butt it up to it so long as it’s buttered with mortar?

Yes. Otherwise water will just go down the narrow gap.
