Building insurance advice for timber building in my garden

My new property constitutes a 4-bed detached Victorian house in about 1/2 acre of land on the edge of woodland.
In the main garden, separate from the house, is a log cabin building approx 11x7m. It was formerly used for a business and has a kitchen & bathroom, it could well be used as a separate dwelling - granny flat, etc. It even has a separate address for post/utilities, even though it's within the boundaries of the main property, access is through the garden not from the road (so it's not a separate entity for land registry)

I'm having a nightmare getting any kind of building insurance sorted. Trying to get a single policy is confusing everyone since they are two buildings with very different construction/ages. Just had a quote for over £8k!

I'd welcome any advice how to go about this. I need the buildings covered for the mortgage.

My substantial house stands on land that also has several types of detached outbuildings scattered over it. My building structure ins covers the house and all of my outbuildings (inc my workshop/barn) on the same policy. Strangely thought, fences are only covered if damaged by the same storm/incident etc that caused damage to other buildings.

are any of the outbuildings themselves substantial/liveable? Did you have to go through this in a lot of detail with the insurer to ensure they are covered.. mind if I ask who you use?

I thought we had been with the same inc co for the past 30+ yrs, but my disabled wife informs me The Economic was absorbed yonks ago and she moved to something called Admiral after a micro clause wording tussle with Churchill and the ombudsman. She is the lawyer of the family (ex-treasury) so I leave everything legal for her eyes.
The barn/workshop is large enough to fit the house into it twice over with maybe even room to spare and the rec rooms was a bungalow before conversion.
