Its because people are running around like headless chickens on a lie - it wasn’t the hottest year at all -- it was the hottest SUMMER - not year. It also includes the average mean temperature overnight - if you strip that out then -- there is noting to see here. This is why people are sceptic about stuff as they try to fool people - basically they used floored data for that hottest 1 day since the earth was formed and they have nowhere to go with it so instead push out misleading figures like hottest year to keep the world boiling narrative going.

I think it is normal to include night time temperatures. You take the daily highs and lows to get the daily average.

I think you quickly get used to it. We used a fan for about two hours in total this summer. Much of the time we would have liked it warmer.

@Brigadier, as you seem aware, many dormer bungalows are particularly bad in the hot weather. Some sort of a/c is the only real answer.

The plan is for 4" of Kingspan or similar between the rafters (leaving an air gap to the felt), as the current ceiling is like a radiator when the sun's been on the roof tiles for hours.
