How many wires for phone VOIP

You only need 2 wires for the main incoming line, but 3 wires are needed from the main BT master socket to any extension slaves. Terminals 2, 3 & 5. 2 & 5 being line & three is to do with the ringers.

Not these days. Very few, if any, modern phones require the "bell" wire to "ring".
 
I just used two wires from the CAT5 for mine and it works fine. You only need one pair for a basic analogue phone plugged into a VoIP adapter.
Not sure now days, but at one time you could get away with it, but needed to use another master socket. But its been a few years since i was involved with any phones.

Modern phones work fine on two wires, the older mechanical phones, needed the full complement, just to prevent additional mechanical phones from 'tinkling', when a number was dialled on one of the other mechanical dialled phones.
 
Thanks everyone the install was done and the phone working fine on the 2 wires. Its now plugged directly into the full fibre router
