I'm having to plaster a 20mm gap all the way round my patio door and the plaster cracks where it joins the existing wall.
What am I doing wrong?? :?

Apply PVA too the masonary (brick, block) and leave to dry. Give it a quick second coat let it go tacky then plaster away.

You are trying to cure suction, in other words, the dry masonary sucking all the water out of the plaster before it has time to cure thus causing the plaster to shrink and crack.
