Hi folks. I ve found this forum very usefull, so hopefully this question can be answered.

I am planning on making some wardrobe doors, shaker style from veneered MDF with glued on 6mm strips of maple or similar wood, for an alcove

Can maple or similar be purchased 6mm thick and from where?

Many thanks

You would have to get it machined up from a local joinery works or timber supplier with machining facility.

I would go a bit thicker say 8mm on to 13mm veneered board as the thin stuff can get chewed up in the thicknesser. Make sure the door is totally flat when you apply the strips as if its twisted you won't get it straight, bit like laminating a curve!!

Easier to use 18mm Maple veneered mdf, less likely to fail than a diy job.

And how are you going to get a shaker panel with that?

The method the OP suggests works well as it saves a DIYer having to make a proper morticed and tennoned door and there is less likelyhood of timber movement.
