A simple to power bathroom over cabinet light?

Yes, no real problem with 12 volt DC, but the question is where the transformer will go, it is where wires will run, how to hide transformer, which is the problem, you will not be able to plug into the shaver socket and you likely can't have the transformer exposed, so possibly not simple or straight forward, but it can be done.

I don't think he meant plug in to the shaver. No electrical reason not to connect it to the shaver circuit - or fan.

Also will you want a switch somewhere?

If you want it to come on with the existing light, then you will have to connect it to that light or possibly the existing switch.
