Advice re Garden Sheds

Hi

DIY is not my greatest strength so apologies if some of my questions appear stupid.

I have a 10x8 graden shed which needs replacing. The walls are of an overlap design, which after years of abuse, doesn't always overlap, so i now have gaps, making it non-weatherproof.

I use it for storage, as well as having a fridge freezer there etc, so I'm looking for a decent sturdy one to replce what I have.

I think I have decided on Tongue and Grove construction (walls, roof and floor) rather than overlap walls or single sheet floor.

Apex rather than Pent roof also appeals as I like the height to be at least 6ft all around.

Probably going to go for security style windows, as normal windows just remove storage space on the walls.

But, what else do I need to consider?

Is the extra 20% (ish) cost for tannelising worth it?
What is Ship-Lap T&G construction
How thick should the timber on the walls be?
Does the size of the frame 'really' matter as much as the marketeers say?
Should I use a local timber merchants, or can buying on the Internet really work?

First quote was £1000 fitted, but I need to get that down by quite a bit.

Any suggestions of help would be much appreciated.
