A decent decorator, or carpenter could rebuild the profile. (I am a decorator- I went for two pack filler)

In your case, image 1 and 2, yeah, the profile is more difficult to reproduce at floor level, but the bit trimmed back could be moved down to the floor and the gap above would be trivial to sand and fill.
Image 3, a real carpenter should be able to replicate the basic architrave without issue. It is incredibly easy to do so. Last week, I had to replicate an equally basic architrave. I got the local timber merchant to rip the thickness down to 19mm- from memory, they charged a quid for a 1m length. I then ran it through a rather rough bandsaw to get to overall profile and then a palm router to replicate the rounded edge.
Your "carpenter" seems to have tried to get the image 3 profile close... and then gave up.
Again, he could have used the original architrave, shunted it down and used 2 pack filler to fill the gap above.
That said, I have no idea what the agreed budget is. Machining timber and back filling/sanding is time consuming. The lock photos- I charged about 6 hours just for the filling. The customer was happy to pay that.
I don't want to malign your chippie but he is either incapable of doing it correctly, or he might think that doing it properly will be in excess of the permissible budget. Perhaps you need to have that conversation.
