Back boiler to...?

G'day.
Moving into a house which houses a lovely baxi back boiler in the chimney.
We plan to knock the chimney and it's wall down and replace the boiler.

My questions are:
Would it be better to install a combi (3 bed house with a small bathroom, two people) and rip out all the tanks i wont need or replace boiler with a heat only and use the existing bits and bobs.

Also, would there be a significant price difference in terms of labour between the two?

Depends of the condition and age if the infrastructure (the bits and bobs)

you need to take into consideration that your existing system is under low pressure and a new combi system will most likely be under a higher pressure (not all) and cam cause problems with old valves and other fittings on the existing system
