Bathroom and kitchen paint tips (and perma white question)

Hi all

I'm going to be painting my kitchen, bathroom and WC walls and ceilings in white soon. None of the rooms have any problem with mould or anything. However, they don't have the best ventilation. And I want to use a paint that can handle a bit of condensation (especially in winter when cooking pasta!!!).

I would like the finish to be on the matt side of the spectrum....

I wondered whether Zinsser Perma-White would be a good choice here (even though there are no current mould problems)? If not, what else would be recommended?

And finally, any tips on general prep of the walls would be most helpful. In the kitchen, there are some small areas of bare plaster.
