I'm planning on building a custom bathroom vanity unit with a small cupboard. I've already purchased a piece of solid wood worktop for the top, but I'm wondering whether to use moisture resistant mdf or marine plywood or something else for the panels.

Also wondering what the best way would be of sealing it, I guess a couple coats of primer and a couple of top coats?

Any thoughts appreciated.
 
MDF is considerably cheaper than ply.
But it's much easier to work with. Use a mask when cutting or sanding.
Properly protected the MDF will suffice, but it will need more protection than marine ply.
Ensure any unprotected edges are not in contact with wet surfaces.
 
Moisture resistant MDF would be fine for a bathroom cabinet, it’s all about the sealing of it. It will take as many coats as it takes, don’t assume 2 primer and 2 topcoats will automatically do the job as it all depends on the quality of both the MDF and the paint. I would be more concerned about the solid top than the MDF. It’s this that is more likely to move, twist and crack if not sealed correctly. Make sure you seal all edges especially around your sink cutout. As a professional paint sprayer, I can appreciate more than most the importance of using the correct paint / lacquer especially in a wet room environment. I honestly wouldn’t know the best paint to use on the DIY market, so my advice would be either find a local furniture sprayer and have it sprayed with a 2-pack material or go to your local decorator’s merchant for their advice. (P.s If they advise a waxoil for the solid top run a mile!)
