I have a shower enclosure which is more than 0.6m away from a wall. By the wall I have a toilet. On the wall and above the toilet is an extractor fan, located about 2.1m high. Am I correct in thinking that a standard extractor fan can be installed as it is not in any zone?

You are and as long as it is IPX4 (or 5 if subject to jets (of water)) it can go in zone 1 or 2. :)
