Best tile pattern and grout width

I'd appreciate some advice please. Tiling wet room walls with 300x100 white ceramic tiles. Walls are plaster skimmed and tanked and aren't 100% plumb or straight. I fancied using brick pattern but have read the walls need to be pretty straight. Also wondering what the best grout width would be. I'm using gunmetal grey grout.

2mm grout lines, if walls are miles out, will be headache with which ever design you use, so brick vs standard design would be no more difficult in that respect.
 
The walls aren't too bad. I checked them out last night more carefully. A couple of areas near the corners. I'll try a couple of rows and see how I get on.
