Blown plaster advice

My partner and I have recently purchased our first home. While renovating a large portion of our rooms have plaster which has small cracks throughout and a hollow tapping sound as shown in the images. We originally were going to blue grit and skim over the existing plaster how bad of an idea would this be considering the condition of the plaster underneath? What can we do to solve this?

No cavity walls so you can't use gypsum plaster?
Looks like it all needs to come off
