Bonding or plasterboard question

I had a new kitchen window installed recently and I have been left with working out how to get a flat wall. The kitchen is being replaced soon and the soil stack will be lowered pretty much to the ground.
The blockwork sits about 12.5mm in from the depth of the lintel. However the wall either side sits about 7mm in.

A, Would you dot and dab plasterboard the blockwork areas then use bonding to bring the wall the wall either side level, scrim the joints then skim the lot.

B, Would you dot and dab and board over the top of all of it.

C, is there another way??

Dot and dab the lot.
9mm board inside window just because it's thinner.
