Bosch Fridge Fluctuating Temperature

Hello, I've got an issue with my Bosch KTR15NW3AG/01 refrigerator that seems unable to maintain it's temperature. The only reason I noticed is that we had a new kitchen fitted, and we decided to go with a built-in Fridge. As the new fridge has less capacity the plan was to put the old Bosch fridge in our utility room. When the new fridge was set up I immediately noticed how cold everything inside it felt. It was set to 4C. So I put a thermometer into the fridge, and when I came back after a while that too was reading 4C. This made me suspicious of our other fridge. I put the the thermometer into to find that the temperature is all over the place. Sometimes as low as 2C, but seems to go between 5C and 8C. The fridge has a rotary temperature control so does not have precise control. One end of the contol is marked "cold"... the other "very cold". At the moment I've got it set 75% towards "very cold". It now explains why I was having trouble with food going off in this fridge before it's "best before" or "use by" date.

I've had the fridge out and cleaned all the dust, etc from the rear of the fridge, and to be honest it was surprisingly clean. The door seal also looks in very good condition. The compressor is not running 24/7... it comes on for a while and then goes off for quite a while as you would expect.

As the fridge is only 5 years old I would like to repair it. The Bosch call out charge is expensive and once parts added do not make it cost effective to look at that option.

I have been looking at the spare parts list for the fridge, but cannot find a thermostat mentioned, so I have no idea what part would monitor the internal temperature of the fridge.

It could be the thermostat, but be aware the temperature inside is not closely controlled by older mechanical fridges - rather they rely upon the thermal mass of the contents, to average the temperature out. Try a temperature recorder, with the sensor dipped in a jug of water, placed in the fridge.
