I need to box in some pipes such that I can tile over the boxing and also have access to the ISO valves.

I'm not 100% sure how the tiles will line up so I wanted to leave the boxing and access panels until the plastering is done.

Is there any specific reason why it's normal to box first then plaster? As I see it, my room can be plastered and I can then fit the box section on top of the plaster.

I won't be plastering it myself - I'm a keen DIYer but not that skilled.

It's not a problem plastering first, then box in the pipes, especially if you're tiling the boxed in area.
If you were plasterboarding/plastering it, the benefit of boxing in first, is that you can "tie in" the boxed in area, to the adjoining walls.

That's precisely what I thought. And I will be tiling the boxed section. Cool, time to find me a plasterer then as I'm ready for it.
