What you call an "off" period, set the temp to frost protection.

12C is probably what your insurers require.

The heating will be off unless the inside of your house goes down to that temperature.

So how do i have periods during the day when the heating should be off

You just set the temperature lower during that period. It's not a timer that gives on/off control. It's a programmable thermostat that lets you control the room temperature throughout the day.
EG 06:00 @ 20 deg
08:00. @10 deg
12:00 @ 10 deg
Etc etc etc
