Building a fake chimney breast around wood burner

I like the minimalism you already have. I do get it though, the chimney breast is traditional. Or rather was, in Victorian times. It does have a nice cosy feel though, for reasons that don't make any logical sense.

Seems a shame to waste internal space just to make an empty box full of nothing.

The space isn’t usable currently anyway! The breast will only come out as far as the hearth ? And then will have so much more storage in the room hahaha

We've got no chimney breast but have a 1980s stone garden wall style fireplace. I hate it and it will be destroyed one day, but I will have to find a way of giving the room some sort of focal point. It's tricky. I'll be browsing photos of modern flats to see what does and doesn't look relaxing. Surely you can have a cosy feeling room without a giant box full of nothing? Many other countries have never had this concept of the lump of masonry in the centre.

But... what you already have is pretty much what I was planning!

Your TV definitely needs to be lower. The traditional box-in-the-corner thing does seem to feel right. Beyond that I haven't got a clue, I can make stuff but internal decor is weird.
 
Your stove is already recessed, adding a chimney breast on the front of it will mean it will need relocating further forward. (Unless you want the stove and all it's heat set in the back of a cave)
This would mean adjusting the position of the flue, best to get this professionally checked to ensure you don't fall foul of regulations, there are regs defining angles and bends on flue pipes.

Yesss, that's the plan, I've already reached out to someone to come take a look at how far forward we could bring it in to the room - this will inform the rest!
