I'm trying to work out if the unevenness in the slabs is to guide the water down the wall.

Who would stand back and think "job well done" there, not many!.
 
I think the more pertinent question is "should paving slabs be used", as it appears they can!
 
inside the house doesn’t bear thinking about.
 
I like the look of it. Ok you wouldn't want it on your house, but ideal for a disney style folly in the garden.
Looks a bit like an igloo!
 
It's not that different from Ashlar facing stone, which was quite thin because of it's cost. Often stuck on a brick backing wall with tie irons to hold it in place. As these have rusted over the years some of the stone work is starting to bulge out.
