On a Cat5e installation, is there much difference in quality/performance between relevant componentry - jacks, UTA cable, 110 punch down-blocks, etc. or is it all much-of-a-muchness. I'm wondering how far I have to go in specifying this stuff.

If the items referred to are really CAT5e spec. then probably no but there is a lot of stuff that manufacturers/sellers supply that they claim meets CA5e specs. but which doesn't by a long way.
Good example look out for cheap network cable that claims to meet CAT5 specifications but the actual cable cores are an inferior CCA (Copper Clad Aluminium). The specs for CAT5e (and CAT6) cable says solid (or stranded) COPPER cores, NOT CCA or anything else but solid copper.
So yes suggest to @Nakajo check what you intend using is CAT5e in reality and not CAT5e lookalikes.
