I am looking for cement that will go off a bit quicker that normal
for ridge tiles and the like, I have tried lafarge rapid set from wicks
but this is too fast, does anybody know if there is one
a bit slower setting.

I was thinking of giving this a try.
I thought there used to be a fast set that gave
you a couple of hours before it went off ?
 
Could you use an additive like sbr?

It definitely makes mortar go off faster in my limited experience

A mate of mine works for TFL. When the services had to chop up the A40 westway flyover he insisted that they use aviation grade concrete so that it could be re-opened as quickly as possible. I have no idea if the cement used is a two part product or not though. The big downside is that the stuff is wayy harder. The next services that need to cut through the stuff is gonna get through a lot of diamond blades.
 
There is one called QuickCem that's slower than the Extra Rapid in the yellow/green bags. I think Jewsons do it.

I will have a look at that, I was sure there used to
be one slower than rapid set.
