what are the best tools to use to chase out holes in walls for sockets and cables? how deep should they be? and do they have to be perfectly square or have i got some room for error?

Best to use a lumb hammer and a combination of a sash knife and scutch chisel, oh and plenty of brute force. The hole needs to be as deep as the box you are fitting. as for the hole being square, this is not crucial as long as you can get the box to sit level, the surrounding area can then be patched up.
