Chimney breast removed what to cap bottom of chimney with?

I have recently had the chimney breast removed in my old living room but due to the layout of the house it could only be removed up to the ground floor ceiling. The RSJ is already in place and signed off so I am getting ready to put up new plasterboard but I need to cap the bottom of the chimney, what should I use? I presume plasterboard could collect damp if it it sits directly at the bottom so would i be better off using something like cement board and sealing with mortar?

any tips appreciated (the carry bag is in place to keep any dust and rubbish coming down until its sealed, its not permanent) I will be putting an air brick in the room just above.

A piece of ply would work as would some cloak, even dabbed plasterboard above the ceiling layer.
