Cleaning a York Stone Floor

I bought my house in an auction some time ago. It was in pretty bad state, and some things were just not as important as others. My kitchen and breakfast room have york stone floors. Unfortunately, the kitchen ones had to be covered over with tiles, to be restored another day.

The breakfast room floor was left pretty much as it was, apart from re-grouting and now, its turn has finally come!

Trouble is, they are FILTHY and sealed over. Really dark grey, patchy and always filthy looking. I accidentally chipped one the other day, to revealed really light grey stone.

How can I get them more like the original colour? And do I seal them again afterwards, and what with? I am all googled out..... :(
