Combi/condensing boiler info

We've just moved into a house with a combi/condensing boiler. Not had any dealings with these before, much prefer the old fashioned way! When the pressure drops, what is actually happening and why? When I 'bleed' the system back up to 1.5 or 2 bars, what am I doing? Am I letting air in or out, or water in or out? I really haven't a clue what's going on!!
 
There's stuff about fault conditions in the faq - have a look there under pressure/filling etc for starters.

You don't have a tank in the loft so the water has to go somehwere when it's heated and expands. There's a can of air (pressure vessel) in the back of the boiler, which gets compressed. The whole system is kept under pressure (about 1 bar).
