Concrete Floor Q's - Color, Polyurethane

Hi, good afternoon.

I fancy laying a concrete floor in my kitchen. I just haven't fiquired it all out yet :) hope you can help.

What I would like is, a very dark grey concrete, how do I achieve this?
Do I get black/grey quartz sand or buy normal sand and dye it?

To finish, I read epoxy is used for a nice shiny finish, the problem is though the kitchen gets alot of sunlight, which would turn the epoxy yellow eventually.

I heard polyurethane is the alternative to stop yellowing. Upon reading about it though, this requires a primer first?

Any help would be great, many thanks

Ps, I know polyurethane is glossy, but can it be buffed like epoxy ?
