Im about to order purchase all the things to remove my load bearing walls. Ive had a structural engineer come round and do all my calculation's.

His been a total nightmare and ive had to get him to redo the work. But ive finally got everything i need.

His has spec'ed a 450 x 215x 102mm padstone for the one wall where the connection is and 150 x 215 x 102 pad stone to go ontop of the 150mm "nib"

The first one i can find. But I can't find the 150x215x102 padstone for sale. Would it be acceptable for me to cut down a larger one to suit?

Yes, you can make ideal padstones out of lengths of pre-cast concrete lintels.
They are available 140 deep by 100 wide, and can be cut to any length required with a disc cutter See if your locall builder's merchant has any short or broken ones.
