A minimum of whatever the hob manufacturers documentation says...
the correct answer is the larger of the dimensions from both the hob and extractor instructions
just fitted one and it said 660mm at least
however you would walk into it and bang your head and sso you can raise it

depends on the hob being gas or electric
natural gas hob to underside of hood should be the greater of the hob or hood manufacturers instrutions
if there is no instructions or dimensions the recomended height is 760mm
