Hello
Im looking at JG Speedfit plastic pipe for a new central heating install or is it better to use copper pros and cons? Is plastic as good as copper these days?

Just a DIYer, so I'm sure you will get better answers
BUT,
In a cloakroom i refitted recently for all water and added a rad
I used the JG Speedlight layflat and 90 formers to save on connections, and then where connected to the radiators, and on show , I used copper.
I made sure i used the correct inserts throughout, JG have 2 types

The inserts you used were they the double o ring type

As I say, just a diyer, so i'm not recommending JG over copper, its just what i used, following some advice

I used 2 different types, the o'ring for JG to JG on all the items, I had a lot of things i used , isolation valves, some angles , non-return valves etc
And the other type on compression joins

Plain Insert - https://www.johnguest.com/speedfit/product/inserts/tsm-pipe-insert/
Super Seal insert - https://www.johnguest.com/speedfit/product/inserts/superseal-pipe-insert/

I had some great advice from an online store where i purchased all the plumbing stuff, https://www.jtmplumbing.co.uk/ They helped a lot in making sure i had all the right kit, and also advised on some of the different fittings available. I also had an issue with one of the rad valves and they replaced on nextday delivery - not sure if i'm allowed to link , so a mod may decide to remove, but they really helped and very good prices, i think at the time below screwfix. One of the issues I had was on the toilet waste , and following a question here and some advice , i contacted the company and they gave quite a few alternatives which solved the issue i had on a waste pipe, saved me making an extra connection

Way too much plastic waste in the oceans and that's exactly where your plumbing pipes will end up. Do you want to be responsible for killing whales? Stick with 2000 yr old copper pipes. The Romans knew best.

We use both copper when on show virtually all using press type fittings.
Also do new build nearly impossible not to use plastic on first fix.

Copper would always be the first priority however I know full houses plumbed in Plastic in for heating and other well over 20 years and never a leak. It does work. You will here stories of some fittings failing but if done correctly, there shouldn't be an issue.

I would be worried about mice chewing the plastic.

I once had a mouse chew through a basin waste pipe in the cavity void.....that was not fun.....

So I dread to think of the mess if they dared chew through an internal pipe under mains pressure.

Plastic, and if done properly the only joints will be at the radiator and a central manifold.
