The main reason for vaccination of children and actually some other age groups is to cut down transmission. Children are very good at that. The reason for that is too much for numpties as it relies on probability but it's a real one with limited scope. Any reduction helps.

Simples really. Every bodies immune system takes time to get going especially when it's a new thing to deal with. Vaccination speeds things up and can also leave features that are better at dealing with it.

Anyway it sounds like covid could be kicking around and active one way or another for years so there is a chance everybody will have the opportunity to experience it.
