DHW and options. This will not be DIY plumber coming Monday, want ideas?

The pipe work is far too long, and not lagged, but we have three bathrooms, and two kitchens, so fitting 7 litres under sink units, seems expensive. The immersion heater thermostat has been damaged, likely poor connection, and it seems prudent if possible to fit a longer immersion heater, so that seems the most likely way around the problem.

However, open for ideas, winter DHW heated by the central heating, summer either off-peak or solar, the thermostat was 7 inches, so assume short immersion heater, and with CH running it will last three days from last time boiler on, but immersion heater lucky to last the day. It goes in from the top.

I use around 5 kWh/week to keep DHW hot, so not expensive.
 
A 7" immersion heater fitted in the top will only heat the top of the cylinder. Can you not fit a longer immersion heater?
