Diconnecting Kitchen Taps

I need to remove my current old kitchen on saturday. I will turn off the mains to remove the taps and sink, BUT, as the new kitchen is not being fitted for 2/3 days how can i have the mains back on for toilet, showers etc without the water shooting up the sink pipes? What can i fit on the ends of the pipes to prevent it?
 
Nobody mentioned taking the old taps off the sink and re-fitting them on the pipes. :?:
