Different switches have different markings.

From what you have described you have a live loop in (feed), a live loop out (to the kitchen) and a switched live (to your new light fitting).

Loops will connect to ~
Switched live will connect to L1.

But as already stated you have probably fried the dimmer. Try the original switch to work out which cable goes where or even better buy a multimeter!
