is there a proper way to do this or just burst it apart with a knife? i would like to be able to put it together again after cleaning

My advice would be leave well alone and just clean the handset as it is. Usually most phones are clipped together, some with small screws as extra fixings. But forcing it apart will inevitably break some (or all) of the clips and make correct reassembly impossible.
