So we live in a 1920s house, no cavity walls, we have just had put all new plaster on the walls ( dry lining) someone has now told us that all modern forms of plastering aren’t breathable so by doing this the house will now not be able to breath even more. We were having humidity issues anyway. Is this true?

Nonsense.
It would have been wise to insulate though.

it depends what you mean by breathable

if you replace lime plaster with modern drylining on a heritage house it could cause problems on a house with no cavity walls
but then painting with vinyl emulsion paints over lime plaster also stop them breathing -it needs lime wash

Unfortunately drylining solid walls can cause issues -if you have a house with external walls that are say a solid double brick wall 225mm thick then the surface temp of the internal face will be pretty cold -so insulation becomes important

how was the drylining done -dot and dab would not be a good method as it creates cold bridging
