Earth wire and double insulated appliances

I have an extractor fan for the bathroom which is double insulated so doesn't require earthing. My question is what is the best thing to do with the earth wire? I've cut it back at the fan but should I still wire it in with the rest of the earth wires at the junction box or should it be cut back there too?

Similarly if I use a plastic mounting box for a light switch which doesn't require earthing, should I connect the earth at the junction box or cut it back?

Is it acceptable to use three core cable in these scenarios or should I be using two core cable?

the question is............what if you change your mind, or move house, where has the earth gone?

You should put sleeving on it and a choc bloc on the end so the earth wire cant touch anything, at the other end it should be connected as normal
