double insulated ones, don't require an earth connection
So what do you do with the earth cable in the T+E , double insulated means low voltage?
you can snip it off, or leave it there but safe.
Double insulated means the fitting is or the cables are double insulated.

It is not a good idea to snip the earths off. Terminate them correctly in a choc block making sure you have put some sleeving on first. If your electrics need to be checked for any certification in the future the earths are needed to do R1,R2 tests.
