Fascia board help (Heights and cap over)

Hi all

I'm getting a bit confused about fascias. It's a flat cold roof (OSB, Firring, Joist, Wall plate and Mortar) which will have an EPDM rubber top. I have "Kerb Trims" (that sit on the top edges) being delivered and they come down around the face of the roof by 80mm~.

1. How do I figure out how tall I purchase the fascia board? Do I measure from the joist (excluding firring) to the bottom of the mortar bed?
2. The roof is sloped slightly, so does this effect the fascia board height?
3. Can I use cap over style instead of full replacement for all sides of my structure so long as their is adequate places to fasten them?
