Is a faulty injecter likely to burn out the ECU, as my local garage says it's quite possible and their diagnostic said firstly there is a faulty injecter, they kept the car overnight to test from cold, this morning the same fault is coming up on their diagnostic equipment.

yes, then rang me and said I also need an ECU (at a cost of £500 odd on top of the cost of the injecter)

If the ecu was fried they wouldn't be able to read the codes.

If they reckon it is ecu, send it to the ecu doctor (google them) who refurb your existing one.

sadly you cant trust these garages,they will tell you anything to try and screw another 500 out of you. id agree that if they say the ecu is fried you can send it off to the ecu doctor and get it tested

Totally agree on that.
but can I refer back to my original question, can (or what are the chances of) a faulty injecter goosing the ECU?

I've changed a dozen or so faulty injectors on various petrol vehicles (no Fiats though) and not one has goosed the ECU. Each one has shown a fault code too. :)
