Fill chases with a backing plaster like bonding/hardwall/tough coat/whatever you’ve got then cut back the edges and skim with multi.
Or use easifill and sand it (dusty)
For the ceiling a piece of plasterboard, then skim/easifill to bring flush with existing

Make sure you use plenty of noggins around the sides of the hole in the plasterboard before patching it,,, and don't forget to tape all the joints where the old plasterboard meets new. Another thing, if the hole where the extractor was circular, trim it to make it square, much easier to work with a square hole.
