Finsh Tiled to ceiling

Hi, I am planning on re-tiling our bathroom.

What is the best way of finishing where the wall tile meets the ceiling?

At present the tiles stop, there is an inch of emulsion/plaster wall. Then coving and the ceiling....It looks nasty

Just cut the tiles to within 3mm of the ceiling and grout. sounds like the previous tiler laid out badly and then couldnt be bothered to cut a tile!

Dont just start from the top of the bath, before you start tiling dry layout the tiles so that you dont get a small cut a the top or sides, anything under 40mm can be hard work. You should have a cut tile into the corners (ideally a half tile) to allow you to cut around walls that are out of square. Read the tiling sticky it will help you.
 
There are many things that can catch you out with tilign/re-tiling. With walls, you need to consider tile weights, prep & materials & suspended timber floors need special consideration. I would advise you read the Tiling Sticky & Forum Archive posts before doing any work or buying materials, it could prevent you making disastrous & potentially expensive mistakes. It’s also important to use only quality trade tilling materials of the correct type for your tiles & tile base; cheapo own brand & DIY stuff is mostly crap.
