Hey how do people tend to first fix the shower waste on new build properties? Do you leave it under the floor?

Is it usual to leave the pipe under the floor then take abit of the floor up in front of the tray when fitting?

Not really, I suppose you could leave it above the floor if you know that a raised tray will be fitted. If you intend to fit a low tray, leave the pipe under the floor with the access hole (as suggested) making sure that the pipe is not on the wrong side of a joist when the tray is fitted.
thanks yes being the wrong side of a joist was a concern do you realy need the tray or at least the dimensions before you first fix the waste then?
