Fitting a soil pipe through a joust

Doubling up may not be required depending on span and situation, hence my suggestion you seek local advice.

You can really only see limited info from the picture, for instance there would seem to be a load-bearing wall just to the left and no information on the span to the right in the picture.

but others views may differ.

This forum is not the correct place to be asking how to do the work. You need a structural engineer to advise on how to safely carry out the work. When you and your neighbours start to get structural cracks using "an internet forum said it would be okay" isn't going to stand up as an argument.

We're all quick to jump on people asking for advice on DIYing gas but there are major risks involved with altering the structural integrity of a property. It's important to obtain appropriate advice.
 
But if you intend to come through the joist as you had planned and turn left or right keeping above the ceiling then trimming is no good, as you would have to go through the trimmer joist.

Trimming would only work if you came through the joist then went down the way - but there is a door there.

what headroom is there?

A false ceiling would make it all much easier.
