Garage Roof - Flat or Pitched?

Hi My garage roof has pretty much had it so I am planning to get it replaced, timbers are sound but all deck and boards are perished.

So, Its pretty big, could fit two cars in it (its an outbuilding, single skin brick) My question is...

I intend to use it for brewing/gym/workshop so ideally would like to make it as dry and damp free as possible in the future.

Is a flat roof ok for my needs? will the type of roof make much difference to its intended use, in terms of temperature regulation etc.

I maybe need to consider wall, floor damp issues but as I've got to get this roof sorted, does anyone have anything to share about choice of roof for this use

Been quoted 2700 for a EPDM flat replacement.

Very grateful for any advice as I now b**ger all about it.!

If the roof work is carried out correctly then I don't see why not and there is a way for removing the extra moisture from brewing but not sure on how much extra moisture is produced from brewing. Some of the felt companies are offering 25year guarantees I think doing a pitch roof would cost more bit nor sure how much
