Gazebo/Pergula roof advice please

Already bought the panels if I have the 2inch of the wood flat then I technically have 50mm is this long enough for the hex bolts?

If you mean 2x1, there is no way you can use that, it's just not strong enough laid flat. Vertical, then the bolts will split the 1" width.
Can you recommend some tape please?

No, I have never used, or needed any. How much over-lap will there be?
 
If you need to introduce a slope, what about cutting some firring strips (long cheese wedge shape), and attaching along your rafters? as they do for flat roofing.

If you have a circular/table saw, you can get two strips from a length of wood.

Hiya, restarting this project now after a long winter, only actually fitted one panel last year. anyhow as the original pergola is far from square I have had to rejig some of the panels and they now have holes were screws wont be going, how is best to plug these please, dont want to put a screw in to nothing as I will see it from underneath. Way out of my depth here lol.

More questions sorry, is there such a product which coverers the top part of the wall and where the roof meets up please? I need an L shaped profile at a right angle but not even sure what to search for? Guessing this will be plastic and I will use the same gunk I used on the roof overlaps and also the roofing type screws to fix it in place?
