General recess spotlight advice required

I need to install some recess spotlights in my dining room, long story and 3 men standing in a room for an hour scenario!

There are various types of spots out there, and I was wondering what everyones findings were on them. I'm not asking how to install them (but you can if you want). Anything to look out for, anything you hate about types (rather than makes, to keep the mods happy). Type to go for, etc.
